  • Yield: Serves 1

1 Sausage Krakauer Bacon Frankfurter
50g Potato Puffs from Lamb Weston
25g Mozzarella
2 Eggs
1 tbsp Butter
25g Guacamole
50g Spinach
20g Tomato & Red Onion Salsa

1 Crack your eggs into a bowl and give them a good whisk. Add a pinch of salt. Melt the butter in a pan on low then add in the eggs. Stir occasionally until scrambled.
2 Shallow fry the Krakauer Bacon Frankfurter in a pan for a few minutes until they are slightly brown and crispy. Once cooked slice in half.
3 Deep fry the potato puffs until they are crispy and golden on the outside.
4 Now it’s time to fill the wrap. Place one half of the Krakauer in the middle of the wrap. Layer up the rest of the ingredients; guacamole, salsa, cheese, Potato Puffs. Topped with the scrambled eggs and a few leaves of spinach. Close up the wrap.
5 Pop the filled wrap into a frying pan to crisp the outside. Around 2-3 minutes each side. Serve and enjoy!
