BBQ Summer Sessions: Chef Philli's Sausage Salad

And who said sausages aren't versatile? Chef Philli cooks up a real summer treat - a Bockwurst Salad. The 2020 Master Chef finalist teamed up with Weber and The Sausage Man to bring you the Sausage Salad, a way to serve those wieners with a touch of class. Give this Wurstsalat a whirl at your next BBQ and impress your guests for sure!

Ingredients

  • 1 Sausage per serving Jumbo Bockwurst 18cm
  • 2 teaspoons Dijon or Handlmaier Mustard
  • 2 tablespoons White wine vinegar
  • 2 tablespoons Olive oil
  • A dash Orange
  • A handful Rosemary
  • 3 bulbs Chicory
  • 1 Granny Smith apple
  • 2 bulbs Breakfast radish
  • A handful for garnish Toasted walnuts

Instructions

  • Prep your grill
    Get your Weber Genesis grill super hot on the sides, leaving the middle glowing in the indirect heat.
  • Bockwurst
    Pop your Bockwurst on the middle of the grill, close the lid and let the sausages cook for around 5 minutes.
  • Get dressed
    For the salad dressing, two teaspoons of Dijon mustard, two tablespoons of white wine vinegar and two tablespoons of olive oil. Whisk, then add a bit of orange juice and rosemary.
  • Salad time
    Slice red and white chicory down the middle into thick strips, use a mandolin to thinly slice the fennel (keeping the throngs or 'sprucy ends' for garnish) cut up into cubes a granny smith apple and slice some breakfast radish.
  • Bockwurst back in action
    Remove the Bockwurst from the grill and leave them to rest on the side.
  • Sauce your salad
    Throw the salad ingredients into a bowl and garnish with the dressing you made earlier. Toss together.
  • Slice the sausage
    Slice the sausage into thick medallions and then place on top of the salad.
  • Finishing touches
    Add fennel throngs on top, and sprinkle with toasted walnuts for that extra crunch!
