- 1 Bratwurst XXL
- 100 g Flour
- 2 Eggs
- 200 g Panko Bread Crumbs
- 100 g Katsu Roux Block
- 300 g Water
- 10 g Ginger Pureed
- 10 g Pickled Ginger
- 100 g Stealth Fries Lamb Weston
- 50 g Togarashi
- 25 g Sriracha
- 25 g Kewpie Mayo Japanese Mayonnaise
- 5 g Coriander
- 5 g Fresh Chopped Chillies
- 5 g Spring Onions
Katsu Curry SauceMix the Katsu curry roux block with water and ginger. Boil the mix to emulsify. Karaage BratwurstBread crumb the Bratwurst XXL with flour, eggs and panko. Deep fry the Karaage Bratwurst until golden brown. Togarashi FriesFry chips until golden, drain, then toss in salt and Togarashi. Plate Pour some of the Katsu curry sauce on the plate and place the crispy Karaage Bratwurst on top. Add your Togarashi Fries on the side. Drizzle the sriracha and mayo over the sausage. Garnish with pickled ginger. Top the Karaage Bratwurst with coriander, chilli and spring onions.
