At The Sausage Man, we know that sausages aren’t just for breakfast. One of our favourite lunch snacks at The Sausage Man HQ is the Chilli Beef Frankfurter Burrito – bringing a German twist to one of our favourite Mexican dishes. This spicy hand held snack is guaranteed to pack the punch you need to get you through till dinner.   

Sausage Man Chilli Beef Giant Frankfurters are key to this recipe – tasty all-beef Franks with a hot chilli kickThese Chilli Beef Franks are great when cooked on a griddle or grilltaking only six or seven minutes before they’re ready. Add your homemade guac, chivey sour cream and chunky tequila salsa, then wrap the lot in a tortilla and your burrito is already good to go. Sprinkle with Cheddar and grill for a minute or two more for that authentic melty burrito finish 

Though we’ve listed all the steps for you to make your own guacamole, sour cream and salsa, the recipe works almost as well if you pick up a Tex/Mex dip selection from your local supermarket of choice – making this dish even quicker to prepare, if you’re in a hurry. We also advise keeping the tequila to just a dash in the salsa, particularly if you’re having this meal in the middle of a work day…

Chilli Beef Frankfurter Burrito

Ingredients

The Meat 

For the Guacamole 

  • 3 large ripe avocados
  • 1 teaspoon fresh lime juice
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh chopped coriander
  • 1/4 teaspoon sea salt
  • Black pepper to taste
  • Extra-virgin olive oil for drizzling

For the Sour Cream & Chives 

  • 1 pot of sour cream
  • Chives

For the Chunky Tequila Salsa 

  • 1 clove of garlic
  • 1 medium red onion
  • 3 large tomatoes
  • 1 lime
  • 1 sprig of fresh coriander
  • 1 fresh chilli
  • Salt & pepper to taste
  • 1/2 teaspoon cumin
  • Drop of tequila

Instructions

For the Chunky Tequila Salsa 

  • Finely chop your red onion, tomatoes, garlic and chilli. Mix together in a bowl. Chop your fresh coriander and add to the mix, then add the juice from your lime. Add the cumin, salt/pepper and a dash of your favourite tequila, then stir together.  

For the Guacamole  

  • Take your avocados, cut them in half around the stone, then remove the stone. Scoop out the avocado flesh into a bowl. Chop the coriander finely and add it to the mix, along with your crème fraiche, salt and pepper. Halve your lime and squeeze out the juice, adding this too. Mash everything together and mix until your guacamole is smooth and creamy – you can use a food processor to speed this along. Drizzle with olive oil ready to serve.  

For the Sour Cream & Chives 

  • Chop your chives finely, then stir into sour cream or just sprinkle on top.  

For the Meat 

  • Cook your Chilli Beef Frankfurters in a griddle pan over a medium heat, turning frequently, until the meat swells and the skin starts to brown (5-6 mins).  
  • Lightly heat each tortilla on a pan for around ten seconds to soften, just before wrapping (a microwave will work too). Add a large spoonful of Guacamole and Salsa to the centre of each tortilla, halve a Frankfurter and place it on top, then spoon over Sour Cream & Chives. Wrap your four burritos, cover with grated cheese, then place them on a backing tray and grill until the cheese melts and starts to bubble (2-3 mins).  
  • Serve your Chilli Beef Frankfurter Burritos with any remaining dips on the side. Sprinkle a little chopped parsley over each Burrito for an extra pop of colour and flavour.
