A Bratwurst Special
This recipe is a fancier take-on of a classic hot dog. While still including the delicious tastes of sausage, onion, toppings and pickled veggie, we played with the textures.
The crispiness usually brought by the onions is replaced here by the bacon strips. The cooked onion becomes sweeter and is balanced out by the tangy Sauerkraut taste. The delicate flavour of the Bratwurst allows for it to be paired well with the savory bacon, whilst shining above any other ingredient and bringing the whole dish into a complete flavour journey.

It may sound cheesy *pun intended* but FOOD does make people HAPPY! I learnt how to cook from my family. My Oma (grandma) taught me traditional Hungarian, German and Romanian dishes, she taught me patience and to recognize quality over quantity. My mother gave me the confidence to cook and my father showed me that I can have fun with it. I have always been fascinated with British chefs such as Jamie Oliver and Gordon Ramsay, as well as German chefs like Tim Raue and Michael Kempf. I always try to find inspiration from international influences too, chef Kaimana Chee being an esteemed example.
Coming to the UK, I wanted to keep cooking recipes from my heritage. I grew up with dishes originating from Germany and that flavour profile is so well incorporated in the products of The Sausage Man company. Living in the United Kingdom I discovered the true British cuisine and how it brings forward the same elements that I usually love in German dishes: the spices, the simplicity, the savouriness. There is no doubt in my mind that combining the two palettes, British and German, would create amazing recipes that are both delicious and healthy.”
Ingredients
- 325 g tomato puree
- 2 onions
- 1 bay leaf
- 100 ml water
- ½ tsp ground coriander
- salt and pepper
- 6 Bratwursts from The Sausage Man ™
- 6 buns
- 18 strips of bacon
- 1 spring onion
- Ketchup and Mustard
- Sauerkraut
Instructions
- Defrost 6 Bratwurst sausages while you prepare the onion sauce.
- Preheat the oven to 250 °C on grill.
- Dice the onions and sear them in a pan with a little bit of oil. Once the onions have become translucent (you can see through) add the tomato puree, 100 ml water, the coriander, bay leaf, salt and pepper. Let them simmer for 15 minutes, then set aside.
- While the sauce is cooking, wrap the sausages in bacon strips and place them on a pan lined with tin foil. We use around 3 strips per hot dog.
- Put the sausages on the top rack of the oven and let them cook for 15 minutes, keeping an eye on them and turning them over half-way through.
- Slice the buns and the spring onion. Start assembling the hot dogs by scooping 2 tablespoons of onion sauce on the buns, adding the bacon wrapped sausages, sauerkraut, other toppings of choice (i.e. pickled vegetables, salad) and spring onion.
- We recommend serving it with a cold glass of beer or another refreshing drink.
