Bratwurst Katsu Curry

Chef Philli talks us through this Japanese-inspired Bratwurst Katsu Curry recipe, with some top-tips for quick and easy preparation. Crispy Karaage Bratwurst

Episode 5 of Cooking with Chef Philli sees our star making this fantastic fusion of German and Japanese classics! Crispy Karaage Bratwurst, golden brown in Panko breadcrumbs, with delicious Togarashi fries on the side – and covered in delicious Katsu curry sauce. This non-standard dish is daringly different, and could also be adapted to serve street-food style!

Ingredients

  • 1 Bratwurst XXL
  • 100 g Flour
  • 2 Eggs
  • 200 g Panko Bread Crumbs
  • 100 g Katsu Roux Block
  • 300 g Water
  • 10 g Ginger Pureed
  • 10 g Pickled Ginger
  • 100 g Stealth Fries Lamb Weston
  • 50 g Togarashi
  • 25 g Sriracha
  • 25 g Kewpie Mayo Japanese Mayonnaise
  • 5 g Coriander
  • 5 g Fresh Chopped Chillies
  • 5 g Spring Onions

Instructions

  • Katsu Curry Sauce
    Mix the Katsu curry roux block with water and ginger. Boil the mix to emulsify.
  • Karaage Bratwurst
    Bread crumb the Bratwurst XXL with flour, eggs and panko. Deep fry the Karaage Bratwurst until golden brown.
  • Togarashi Fries
    Fry chips until golden, drain, then toss in salt and Togarashi.
  • Plate
    Pour some of the Katsu curry sauce on the plate and place the crispy Karaage Bratwurst on top. Add your Togarashi Fries on the side. Drizzle the sriracha and mayo over the sausage. Garnish with pickled ginger. Top the Karaage Bratwurst with coriander, chilli and spring onions.
