Crispy Karaage Bratwurst

Crispy Karaage Bratwurst, golden brown in Panko breadcrumbs, with delicious Togarashi fries on the side – and covered in delicious Katsu curry sauce. This non-standard dish is daringly different, and could also be adapted to serve street-food style!

Karaage Bratwurst XXL from The Sausage Man, Katsu Curry Sauce, and Togarashi Fries
|Panko Bread Crumbs||200g|
|Katsu Roux Block||100g|
|Stealth Fries (Lamb Weston)||100g|
|Kewpie Mayo (Japanese Mayonnaise)||25g|
|Fresh Chopped Chillies||5g|
Katsu Curry Sauce
Mix the Katsu curry roux block with water and ginger. Boil the mix to emulsify.
Bread crumb the Bratwurst XXL with flour, eggs and panko. Deep fry the Karaage Bratwurst until golden brown.
Fry chips until golden, drain, then toss in salt and Togarashi.
Pour some of the Katsu curry sauce on the plate and place the crispy Karaage Bratwurst on top. Add your Togarashi Fries on the side. Drizzle the sriracha and mayo over the sausage. Garnish with pickled ginger. Top the Karaage Bratwurst with coriander, chilli and spring onions.
