Krakauer Breakfast Burrito

On the go Breakfast
In the last episode of Cooking with Chef Philli our star takes on the Mexican Burrito with a breakfast twist. A great option for an on the go snack with a Sausage Man favourite front and centre. These burritos feature the popular Krakauer Bacon Frankfurter which combines sausage and bacon (two essential breakfast items) into one!
Ingredients
- 1 Sausage Krakauer Bacon Frankfurter
- 50 g Potato Puffs from Lamb Weston
- 25 g Mozzarella
- 2 Eggs
- 1 tbsp Butter
- 25 g Guacamole
- 50 g Spinach
- 20 g Tomato & Red Onion Salsa
- 1 Tortilla
Instructions
- Crack your eggs into a bowl and give them a good whisk. Add a pinch of salt. Melt the butter in a pan on low then add in the eggs. Stir occasionally until scrambled.
- Shallow fry the Krakauer Bacon Frankfurter in a pan for a few minutes until they are slightly brown and crispy. Once cooked slice in half.
- Deep fry the potato puffs until they are crispy and golden on the outside.
- Now it's time to fill the wrap. Place one half of the Krakauer in the middle of the wrap. Layer up the rest of the ingredients; guacamole, salsa, cheese, Potato Puffs. Topped with the scrambled eggs and a few leaves of spinach. Close up the wrap.
- Pop the filled wrap into a frying pan to crisp the outside. Around 2-3 minutes each side. Serve and enjoy!
