Fermentation has a long history in cuisine from the Far East to Europe, with the practice thought to have been brought to the containment by the Tartars. Literally translated as ‘sour cabbage’, the practice of fermenting cabbage to make sauerkraut became popular in Germany during the 16th century – and the process remains largely the same today!

    Not too vinegary and ideal in sandwiches or with a sausage. I’ve taken to having a little pinch of it whenever I open the fridge (apparently it’s good for your digestion!)
