Sauerkraut is one of the most iconic, popular and distinctive accompaniments in German cuisine. Made by finely cutting raw cabbage and fermenting by various lactic acid bacteria, sauerkraut has a distinctly sour flavour which compliments sausages, schnitzels and other meaty German staple foods like no other. Fermentation has a long history in cuisine from the Far East to Europe, with the practice thought to have been brought to the containment by the Tartars. Literally translated as ‘sour cabbage’, the practice of fermenting cabbage to make sauerkraut became popular in Germany during the 16th century – and the process remains largely the same today!

    Big jar, does 3 of us twice, with frankfurters or bratwurst – and a couple of new potatoes and I can think I’m in Germany. Also Sauerkraut is pretty low in calories.
