Fermentation has a long history in cuisine from the Far East to Europe, with the practice thought to have been brought to the containment by the Tartars. Literally translated as ‘sour cabbage’, the practice of fermenting cabbage to make sauerkraut became popular in Germany during the 16th century – and the process remains largely the same today!

    I have this with almost anything you can think of, cant stop myself having a little every time I open the fridge. Its perfect with any of the sausages sold here, I put a big spoon full at the bottom of my hotdog bun…….love it!!
