Cured and slightly smoked, the meat is brined, very moist and packed full of flavour. This salt-cured ham roasting neck joint is perfect as the centrepiece to a family dinner and can also be sliced for sandwiches, buns or as an accompaniment to another dish. Kassler roasting joints are often served on a bed of sauerkraut with mashed potatoes or fried sliced potatoes.

This dish dates back to the 19th century and is one of the most popular dishes across Germany. How to Cook and Store Kassler Roasting Joint

Cooking times

Do not eat raw!

Cooking instructions

Defrost and treat as a roasting joint.

Oven 200C, Fan 200C, Gas 7.

Cook for for 30 minutes, then reduce to 180C/Gas 4/fan 160C for the remaining time.

Calculate total cooking time for approx. 45 minutes per 600g, plus 40 minutes braising

Once browned after approx 35 min and depending on desired colour, treat like a roasting joint and cover up with aluminium foil or lid.

Shelf life

When goods are received, please store in freezer immediately and defrost the items before using. Once defrosted, keep the items chilled, if unopened use with 14 days.


Once opened, use the products within a few days.

    I expected this to be like gammon, but it’s so much more tender, even when roasted for an hour and a half ! There was leftover for sandwiches the next day and it remained its tenderness. The flavour was amazing with the right amount of saltiness. Will definitely buy again!

    This is twice the price of a supermarket smoked gammon but it is also twice as tasty. Very tender – don’t overcook it. I boiled it to an internal temperature of 72C then used the boiling water to make an amazing split pea soup.
