Get to know Sauerkraut
The humble sauerkraut, loved by many but have you ever wondered why? And, why do Germans use this product all the time? Therefore it’s time to delve into the wonderful world of Sauerkraut and see what the fuss is all about. But first, what is it? Well, Sauerkraut is a simple product, just white cabbage and salt mixed together and left to ferment. Very similar to the popular Japanese dish Kimchi.
How versatile is it?
We all know that Sauerkraut is a fantastic addition to our hot dogs, but is there more to it? Yes! Of course there is! You can create an entire dish from Sauerkraut, or a tasty side. Sauerkraut can be used as the base, mix with other ingredients and you have something fantastic. We have two delicious Sauerkraut serving suggestions below, try today and fall in love with Sauerkraut.
Sauerkraut Salad Ingredients (Serves 6)
- 650g Sauerkraut (entire jar)
- 4tbsp Granulated Sugar
- 4tbsp Olive Oil
- 1 Red Bell Pepper, diced
- 1 Large Carrot, coarsely grated
- 2 Celery Stalks, diced
- ½ Onion, diced
- Fresh Dill
- Pinch of Salt and Pepper
Mix all the ingredients together, leave in the fridge to chill. Serve and enjoy!
Sugar and Sauerkraut
You may notice that sugar features in both of these recipes, this is not because we really love sweet things. In fact, it helps balance out the sourness of the Sauerkraut. Add more or less depending on how you prefer the taste, have a play around. Another tip if you think Sauerkraut is too sour, give it a quick rinse before serving or cooking and that will remove some of the sourness. But, obviously we do not want to remove it all as that is essence of Sauerkraut.
Cooked Sauerkraut
- 500 Sauerkraut
- 1 Onion
- Vegetable Stock
- 1 Pepper
- 1 Salt
- Pinches of sugar
- Bay leaves
- Juniper berries
- Goose fat
- Carraway seeds
Place all the ingredients in a pan on medium heat. Leave to cook for half hour, stirring occassionally. The Sauerkraut should appear softer by this time and you are ready to serve.
